Kaju Burfi / Cashew Burfi - Indian Sweets for Special Occasion

Recipe: Kaju Barfi / Cashew Burfi - Diamond Sweet 


Ingredients: 

1) Kaju /cashew - 1 meduim sized cup 

2) Sugar - 1 large cup

3) Ghee - 2-3 tsp

4) Water - 1/2 cup

5) Elaichi powder - half tsp


Preparation Method: 

1) Take one cup of cashews and grind into a fine powder on Pulse mode in your mixer. (Do it on pulse to avoid it from releasing its oil and becoming a paste) 

2) Take a kadhai, add 1 cup sugar (equal to cashews measure). 

3) Add 3/4 cup of water to it and let the sugar dissolve well. 

4) Once the sugar is dissolved, add in the cashew powder into the kadhai and keep stirring continuously. 


5) Add 2tsp ghee and keep mixing continuously, do not stop in between. 

6) Keep stirring and cooking this mixture for about 30-45 min untill the mixture separates from the edge of the kadhai. 

7) Once its done, just add few drops of ghee, elaichi powder and mix it well.

8) Turn off the gas and pour the mixture into a greased plate. 

9) Make a ball out of the whole mixture (while still warm) and then roll the mixture over a butter paper. 

10) Cut the mixture into diamond shape and let it cool on the paper. 

Yummy delicious kaju barfi / Cashew burfi is ready to serve and eat!!
