Malai Kofta - Indian Curries for your special occasions!!
Recipe: Malai Kofta - Indian Curry!!
Ingredients:
For Gravy Masala:
1) Tomatoes - Large 5no's
2) Onion - Large 6 no's
3) Cashewnuts - 1/2 cup
4) Dhaniya/coriendar powder - 2 tsp
5) Turmeric powder - 2 tsp
6) Jeera powder - 2tsp
7) Kasuri Methi - 1Cup
8) Red chilli powder - 2tsp
9) Whole Jeera - 2tsp
10) Whole garam masala
11) Ginger Garlic paste - 2tsp
12) Oil as required
13) Butter as required
14) Salt to taste
15) Sugar - 1tsp
For Kofta balls:
1) Potatoes - Diced 4 no's
2) Grated Paneer - 100gms or 1 Bowl
3) Green chilli crushed
4) Red chilli powder - 2tsp
5) Dhaniya powder - 1tsp
6) Turmeric powder - 1tsp
7) Cashews chopped - 5-6nos
8) Maida - 2tbsp
9) Coriander leaves - 1cup (garnish)
10) Oil as required
11) Salt to taste
Preparation Method:
1) Heat oil in a kadai and fry the roughly chopped onions & tomatoes and half cup cashews.
2) Fry well untill they turn soft and then turn off the gas. Let it cool completely.
3) Now grind this mixture into a smooth fine paste. (As shown in the video)
4) Next, boil about 4 large diced potatoes and keep it aside.
5) Kofta making process: take a large mixing bowl, add boiled potatoes (crush them with your fingers slightly while adding), grated paneer, crushed green chilli, chopped coriander leaves, 5-6 chopped cashews, turmeric powder, dhaniya powder, red chilli powder, maida, salt to taste & mix it all together.
6) Now make the balls for the kofta and deep fry it in oil.
7) Fry them untill they turn golden brown (As shown in the video)
8) For the gravy: Add some butter into a kadai and let it melt. Then add jeera and saute it, then add turmeric, red chilli powder, dhaniya powder, jeera powder, ginger garlic paste and fry the masala well. (As shown in the video)
9) Next, in the same kadhai, add some more butter and the whole garam masala spices - bay leaf, dalchini, laung/clove & elaichi - 1-2pcs of each only
10) Saute all the masala together for 2min & then add the ground onion tomato paste into it.
11) Add 1tsp garam masala (optional), little bit of sugar and salt to taste.
12) Mix all of it well and add little water if needed and cook for 10min with closed lid.
13) The gravy is almost done, now add some fresh cream/malai into it (I've added very little) and give it a good mix.
14) Once the gravy gets thick, add kasuri methi and cook for 5 min and turn off the gas. Garnish with coriander leaves.
15) And finally dip the fried crispy koftas into the malai gravy.
*Tip: Dip the fried kofta balls in the gravy only before serving it otherwise the kofta can end up turning soggy and will not taste good.
You can serve this with any indian bread like Roti/naan/kulcha/chapathi or even Rice.
