Masala Akki Rotti / Rice flour Roti
Recipe: Masala Akki rotti / Rice flour roti
Ingredients:
1) Rice flour/Akki hittu - 2 Bowls
2) Onion chopped - 2 large
3) Capsicum chopped- 1 no
4) Cabbage chopped - 1 cup
5) Carrots shredded - 2 nos
6) Jeera - 2-3 tsp
7) Turmeric powder - 2tsp
8) Red chilli powder - 2tsp
9) Coriander leaves chopped - 1cup
10) Grated coconut - 1cup
11) Water - lukewarm
12) Salt to taste
13) Oil
Preparation Method:
1) Take a big vessel, add jeera, turmeric powder, red chilli powder & all the vegetables as mentioned above.
2) Next add coriander leaves and grated coconut.
3) Mix them all together (As shown in my video).
4) Add lukewarm water as needed and mix the dough.
5) The vegetables release water too so don't add too much water, observe the consistency of the dough, it should be soft.
6) Now take meduim portion dough and pat it on the kadai greased with oil. You can dip your hands in water while patting to avoid stickiness. (Observe the video).
Note: I've shown 2 kinds of making rotti first in a kadai (Bandale rotti) & Tawa style.
8) The rotti can be either thick or thin as per your choice (I have shown both kinds for you)
9) Cook it on medium flame, add a few drops of oil around the dough and close the lid.
10) Once you see it is cooked and turns slightly brown/little crisp you can remove it. Do not overcook or burn it.
11) I've shown another one on tawa, you can follow the same procedure.
12) The hot Masala Akki rotti is perfectly done. (generally this kind of rotti is supposed to be soft and not crispy)
Serve with coconut chutney or chutney powder or pickle of your choice.
