Karikadubu Sweet/Karida Kadubu/Kobri sakkre

Recipe: Karikadubu sweet /Karida Kadubu 

Ingredients:
1) Maida / plain flour - 1cup 
2) Semolina/ fine sooji - 2tbsp  
3) Salt - a pinch 
4) Warm Oil - 2-4 tbsp 
5) Turmeric powder - 1/4 tsp or a pinch 
6) Warm water - 1/2 cup or as required. 
7) Powdered sugar/Normal sugar - 2 cup
8) Dry coconut - 1Cup 
9) Elaichi powder - 1tsp 
10) Oil for frying. 


Preparation Method: 
1) Firstly, in a large bowl add maida, semolina/sooji, turmeric powder and a pinch of salt.
2) Add some hot oil (be careful, do not touch the hot oil directly while mixing) into the bowl and start mixing. The hot oil makes the kadabu crispy. 
3) Now add warm water slowly as required and start kneading the dough. (Keep adding little water) This warm water makes the dough soft. 
4) Once dough is ready smear a little oil on top of the dough and cover with a moist cloth or lid. Keep aside for 1hour.
5) Now to make the stuffing for Kadubu - If you don't have powdered sugar at home, don't worry just grind the regular sugar in your mixie into a powder. It's about a minute's work. 
6) Once the sugar is ready, grate the dry coconut / kobbari. 
7) Now add the powdered sugar and kobbari into a bowl and mix it. 

8) Add about 1tsp elaichi powder for flavour and mix. The stuffing is done.
9) After an hour, check if the dough is ready (punch the dough and knead for a few seconds) and take a small ball sized dough.
10) Roll it into circles (like poori for example) and keep it slightly thick. 
11) Now place a tsp of the prepared stuffing in the middle and fold it into half. Stick the edges together by pressing slightly. (As shown in the picture) I've used maida paste to stick the edges.
12) I've used a cutter to cut off the sides (it gives a nice look to the kadabu). 



13) Now, heat oil in a kadai/ frying pan and fry the kadubu untill they turn golden brown.
14) Remove it on a tissue so that the oil drains out. Once it cools down completely you can store in a Airtight container. 

Karikadubu/ Karida Kadubu is ready to serve and Eat!!
