The P-A-C-C-O Stir Fry

Recipe: "The PACCO Stir Fry"

Paneer-Asparagus-Carrot-Capsicum-Onion 


Ingredients:

1. Onion - 1 medium, sliced

2. Asparagus - a bunch, blanched in mildly salted water

3. Carrot - 1, Juliennes/long thin slices

4. Capsicum - 1, Julienne/long thin slices

5. Paneer - 1 inch cubes

6. Olive oil/Ghee - 5-6 tbsp (for veggies & paneer)

7. Onion & garlic flakes - 1 tap for veggies and 1 tsp for paneer

8. Salt & Pepper powder - As required

9. Chilli flakes, Oregano, piri Piri seasoning - as desired

Method - Follow picture steps 😊

1. Boil water and add a little salt. Once it boils add the Asparagus and let it cook for 5 minutes. Drain and run under cold water to stop cooking. 


2. Put oil/Ghee in a non stick pan, add the onion and garlic flakes and sliced onions. 

3. Saute for 2 minutes and add the sliced Carrots.

4. Saute for a minute and add the capsicum.

5. Mix it for another 2-3 minutes and add the Blanche Asparagus. Mix well and keep aside.


6. In the same pan, add a tbsp of Oil/Ghee, the onion & garlic flakes and the paneer cubes.

7. Season the paneer with salt & pepper and saute it until it turns slightly golden brown.

8. Add the Oregano and Chilli flakes, mix.

9. Add the sautéed veggies to the cooked paneer and mix it well. Cook for another 2 minutes and add the piri Piri seasoning.

10. Give it one final mix and serve.


Healthy, delicious PACCO Stir Fry is ready to eat.

Note 1: you can add veggies of choice in this - beans, broccoli, cabbage, cauliflower, etc.

Note 2: Do not throw away the ends of the Asparagus - you can put the ends in a pot and voila - grow your own asparagus!
