Onion ka Salan/ Hyderabadi salan - Biryani gravy
Recipe: Hyderabadi Salan / Onion salan ( A perfect gravy for biryani)
Ingredients for gravy:
1) Onion - chopped 1no
2) Mustard seeds - 2tsp
3) Cumin seeds - 1tsp
4) Curry leaves - 3-4pcs
5) Ginger garlic paste
6) Biryani Masala - 1tsp
7) Tamarind water / extract - a pinch or 1tsp
8) Water - as required
9) Oil - 2tbsp
10) Salt to taste
Ingredients for fine blended masala:
1) Peanuts - 2tbsp
2) Desiccated coconut/freshly grated - 2tbsp
3) Onion - 1 large diced
4) Tomato - 1 large
5) Chilli powder - 1tsp
6) Cumin /Jeera powder - 1tsp
7) Turmeric powder - 1tsp
8) Sesame seeds - 1tsp
Preparation Method:
1) Heat a pan and dry roast peanuts, sesame seeds, desiccated/fresh coconut.
2) In another pan, add diced onions and fry till onions are translucent. Then add tomatoes and let it cook for 5 minutes.
3) Now let's put all our roasted ingredients in the blender along with chilli powder, jeera powder, turmeric powder and salt & make a fine paste.
4) Now heat 2 tbsp of oil in a kadhai.
5) Add mustard seeds, jeera/cumin seeds, ginger garlic paste, curry leaves, chopped onions and saute well.
6) Now add the finely blended paste & mix well.
7) Cook it until the oil separates from the side of the kadhai.
7) Add salt & biryani masala of your choice & mix it well. Next, add the tamarind extract/ water.
8) Add some more water and bring it to a boil. (As shown in video)
9) Turn the flame to low (simmer) & cover and cook for 15 minutes.
Salan is a perfect dish that goes good with any biryani, ghee rice or even plain rice.
Hyderabadi Salan / Onion ka salan is ready to serve & eat!!
