Papdi/Papri for street chaat dishes

Recipe: Papdi / Papri - Flour Crackers 

Ingredients: 

1) Wheat flour / atta - 2cup

2) Semolina / Chiroti rava - 1 small cup 

3) Ajwain / carom seeds - 1tbsp 

4) Salt - 1tsp 

5) oil as required 

6) Water as required 


Preparation Method: 

1) Firstly, take a bowl add 2 cup wheat flour and 1 small cup semolina

2) Add 1 tsp ajwain, 1tsp salt and 2 tsp oil. (you can more if you require) 

3) Mix well while crumbling it between your fingers. Keep adding water as required and knead the dough. It shouldn't be too soft, make it slightly stiff. 

5) Divide the dough into medium sized equal portions. Dust some wheat flour and roll them like chapatis but keep the base a little thicker than normal chapatis. (As shown in the video). 

6) Take a fork and prick the papdi with it to prevent it from puffing up. (As shown in the video) 

7) Now using a cutter/ round lid, cut the papdis into small rounds. 

8) Heat oil in a kadai, once heated fry the round papdis in it. Make sure the oil medium hot. 

9) Initiallly fry on low flame & then meduim flame till they turn crispy and golden colour. 

10) Take them out of the kadai and put them on a kitchen towel/tissue for the oil to drain. 


*You can store papdi in an airtight container for a week & use it for chaats.(But note, if the consistency is not perfect they might get soft after 2 days)
