Vangi Bhath/Brinjal Rice

Recipe: Vangi Bhath / Brinjal Rice 

Ingredients:

1) Regular Rice - 1 large cup 

2) Green Brinjal/Mysuru Badnekayi - 1kg cut long pieces (or as desired) 

3) Dry coconut/ kobri - 1cup 

4) Red chilli - 3-4 small pieces

5) Red chilli powder -2 tsp

6) Mustard seeds - 3tsp

7) Urad & chana dal - 3tsp

8) Dry Red chilli - 5-6 pieces.

9) Vangi Bhath masala powder - 2 tbsp (Homemade: Recipe shall be shared soon) 

10) Tamarind water / concentrate - 1tsp / 1/2 cup. 

11) Curry Leaves - 4-6 pieces

12) Turmeric powder - 1 spoon 

13) Oil - 3-4 tbsp 

14) Salt to taste. 

Preparation Method:

1) Firstly, wash the rice and soak it in water (1:2 ratio / as per your calculation) and then pressure cook with 3-4 whistle.

2) Once the rice is cooked, keep it aside to cool. 

3) Wash and cut the brinjal (long thin slices, about 2 inches long) and soak it in water (so that it doesn't turn brown). (As shown in my video) 

4) Just before adding it to the kadai drain out the water from the brinjal. 

5) Heat oil in a kadai, once its heated put the Oggarne spices - mustard seeds, urad & chana dal, red chili & turmeric powder. Let it fry untill the dal turns slightly brown. 

6) Then add the cut brinjal and mix well. 

7) Now add 2tsp salt, some fresh curry leaves and mix well. 

8) Next, close it with a lid and cook the brinjal for about 10 min.(Observe my video) 

9) Then add red chilli powder, vangi bhat masala & mix all of it together. 

10) Add tamarind water or concentrate. (1tsp (concentrate) or 1/2 cup (diluted tamarind water)) .

11) When you start to get a nice aroma, add dry coconut/kobri and mix it well. 

12) Add the cooked rice to the kadai and mix it gently so the rice doesn't break (Add oil if you feel its dry) . 

13) Finally, you can garnish with dry coconut/kobri,  mix well & transfer to a serving bowl.


The Delicious Vangi Bhath/Brinjal Rice is ready to Serve & Eat.
