Nippattu / Rice Crackers - Indian snacks

Recipe: Nippattu / Rice Crackers 


Ingredients:

1) Rice flour / akki hittu -1Cup 

2) Maida / all purpose flour - 1 tbsp 

3) Semolina / chiroti rava - 2tbsp 

4) Red chili powder - 1tbsp

5) Sesame seeds / Yellu/Till - 2tsp 

6) Asafoetida / hing - Sprinkle once 

7) Roasted peanuts - 1/2 cup

8) Curry leaves - a handful 

9) Fried gram / Hurugadle- 1/2 cup 

10) Dry coconut (kobri) 

11) Salt to taste

12) Hot Oil - 2tbsp

13) Water as required

14) Oil for deep frying


Preparation Method:

1) Firstly, in a mixer add roasted peanuts, (peel the skin), fried gram/hurigadle, curry leaves 

2) Grind all these to coarse powder.

3) In a large bowl or vessel add rice flour, maida and semolina/chiroti rava, red chili powder, Grated dry coconut/kobri, sesame seeds/yellu, the prepared coarse powder and salt.

4) Mix it all & add hot oil over the mix, crumble the flour nicely. 

5) Now add water in small batches and knead the dough to a soft consistency. 

6) Let's divide the dough into equal small balls and flatten it out with your hands on a paper/paper sheet greased with oil. 

7) You can also use any mould to cut into round shapes like a cookie cutter or a round lid (if it doesn't come nicely in free hand) then use a fork and poke holes on it to avoid it from puffing.

8) Meanwhile heat oil in a kadai, and deep fry them in hot oil.

9) Fry untill it turns golden brown and crisp while on low flame. 


Note: Once its cooled completely you can store in a airtight container for 10 days. 


Crispy and Tasty Nippattu/Rice crackers is Ready to serve and eat!!
