Recipe: Vada Pav| Mumbai Batata Vada | Lasoon chutney ke saath
Ingredients:
1) Potato/Aloo - 3 large nos
2) Gram flour/besan - 3tbsp
3) Rice flour - 3tbsp
5) Turmeric powder - 1tsp
6) Red chilli powder - 2tsp
7) Asafoetida/hing - a pinch
8) Baking Soda - a pinch/1tsp
9) Water
10) Salt to taste
Ingredients for Vada Masala: (Homemade)
1) Ginger - 2 small pieces
2) Garlic cloves - 5-6 nos
3) Green chilies - 2-3 nos
4) Oil
5) Mustard seeds -2tsp
6) Asafoetida/hing - 1tsp
7) curry leaves finely chopped - 3-4 nos
8) Turmeric powder - 2tsp
9) Salt to taste
10) Chopped coriander leaves for garnishing.
Preparation Method (with readymade masala):
1) Take the 3 large potatoes, wash, peel skin, cut them into cubes & boil them well.
2) Add a pinch of salt to it, (can be boiled on the stove directly or can be cooked in the cooker as per choice). Once boiled drain the water and keep aside.
3) Take a Bowl and add gram flour/besan, Rice flour, red chilli powder, turmeric, asafoetida/hing, baking soda & salt.
4) Mix all the spices well along with water to make a thick batter.
5) Whisk it well to remove any lumps in between. Keep adding water as required, make sure the consistency of the batter is slightly thick and not very runny (as shown in my video)
6) Heat oil in a kadai, add mustard seeds -2tsp, turmeric powder 1tsp and let the mustard splutter.
7) Add the crushed ginger-garlic-green chili. Cook for a minute until the ginger and garlic starts turning brown.
8) Then add the curry leaves, hing and mix well.
9) Now add the boiled mashed potatoes, salt, add chopped coriander leaves and mix well.
10) The vada masala is ready. (I have used the ready masala - "Vaze Bandhu Khidki Vada Veg Paste" which is extremely delicious)
Preparation Method of Vada Pav:
1) Make small sized balls out of the potato/aloo mixture.
2) Heat oil in a kadai on medium flame. Dip each potato/Aloo ball into the batter and coat it well. Then drop it slowly into the hot oil.
3) Fry the vada until it turns golden brown in color. Drain on a tissue paper.
4) Now let's make our Indian burger..the vada pav. Take the pav and slit it (don't cut it fully) (you can toast the pav with a little butter if required, but that's totally optional)
5) Add the lasoon chutney powder on pav (Homemade will be released soon) (Follow my video).
6) Place the fried vada in the center. Serve the vada pav immediately with more chutney on the side and a fried green chilli (fry the green chilli in oil and take it out on a tissue. Sprinkle a little bit of salt on it).
Garma Garam Vada Pav is ready to Serve & Eat!!
