Recipe: Carrot Kheer / Carrot Paysa
Ingredients:
1) 1kg carrots, peeled and chopped in even chunks
2) 1.5 litre fresh milk
3) 2 Tbsp broken cashews & Raisins
4) 1 Tin Condensed Milk- 400gm
5) 1/2 Cup sugar
6) 1 tsp cardamom powder/elaichi
7) 2 pinch Saffron/ Kesari
8) Pista crushed for garnish (optional)
Preparation Method:
1) Wash carrots, peel of the skin and chop them finely or you can also grate them, transfer all of them to a vessel.

2) Now add 1.5 Litre milk and pressure cook the mix of carrots & milk for about 3 whistle.
3) Once cooked, let it cool for sometime and then blend the mix finely. Kindly Note- Do not add water or anything.
4) Now pour the entire blended mix into the kadai or pan & cook for 5 min.
5) Add 1/2 cup Sugar to it & cook on medium flame for 10 Min.
6) You can observe it starts Boiling,then add the condensed milk into it and mix well.
7) The kheer is almost done you can observe it gets thickened a bit and you get to see Orange bright colour.
8) Now add the Elaichi powder & Saffron.
9) Roast Cashews and raisins in ghee put that into the kadai and Boil for 5 Min & its done.
*Garnish with Crushed pista for making it look amazing!
