Imli khajur Chutney

Recipe: Imli Khajur (Tamarind & Dates) Chutney 
and Pani puri Masala Water for the Dip. 

Ingredients: 
1) Dates- seedless -1 Cup 
2) Tamarind - 1Cup 
3) Jaggery - 1/2 Cup 
4) Ginger - 1 small piece
5) Red Chilli powder - 1spoon 
6) Jeera powder- 1 spoon 
7) Dhaniya powder
8) Pudina leaves - 2 cup
9) Coriander leaves -1cup 
10) Green chilli - 5-6 pieces  
11) Tamarind water -1cup
12) Water  
13) Salt as per taste. 

Preparation Method: Imli Khajur Chutney
1) Take a Vessel and soak tamarind with water for 10 min. 
2) Then keep it on the stove and boil it for 15min. 
3) Add the khajur /dates & jaggery into the boiling tamarind water and mix well cooking it for 5 min
4) Add the red chilli powder, Jeera powder, dhaniya powder, and salt to taste. 
5) Add little water to adjust the consistency of the Date and Tamarind mixture and simmer for 3 to 4 minutes. 
6) Turn off the heat and cool the Mixture for few minutes. 
7) Once its done Blend the mixture into a thick paste add little water if required. 
8) Now filter the Thick paste into a bowl to get the smooth finish of the chutney.
9) Imli khajur chutney is Ready to use. 
10) You can also Freeze it for 15-20 Days it will be fresh to use next time. 
Now the Imli Khajur Chutney is ready to Use & Serve!!


Ingredients for Pani puri Masala:
1) Pudina leaves 1 cup, 
2) salt- 2 tbsp, 
3) Dry mango powder 3 tbsp 
4) Sugar - 1/2 tbsp, 
5) Rosted Jeera - 1 tbsp, 
6) Citric acid - 1/2 tbsp
Preparation Method: 
1) Grind all these above ingredients in a mixie and keep aside. (mix 1)
2) on the other hand grind Green chilli, Coriander leaves, pudina leaves 1cup, Ginger and keep it aside. (mix 2)
3) Now take a bowl with Water (qty as desired) 
4) To it add both the ground masala (mix 1 & mix 2) and mix well, add 2tbsp chat masala powder (optional). 


Now the Pani puri masala is Ready to Use and Serve!!
